Eat our freakin fibre-fabulous Banana Oat Bread!

Check out our mouth watering Banana Oat Bread for a healthful dose of soluble fibre that is super speedy (and super easy) to prep!

Ingredients 

  • 4 medium ripe banana’s, the ones no one will touch in the fruit bowl 😆
  • 1/4 cup rice bran oil
  • 1/4 cup unsweetened greek yoghurt
  • 1/3 C caster sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 1/2 cups plus 2 tablespoons self-raising flour
  • 3/4 cup rolled oats

Method

  1. Preheat the oven to 170°C and line a loaf tin with baking paper.
  2. Place peeled banana’s, rice bran oil, yoghurt, sugar, egg and vanilla into a large bowl.  Sift in flour, add oats and mix with an electric beater until just mixed (you may wish to mash the banana’s first – depends how ripe they are).
  3. Spoon into a loaf tin and bake for 45-50mins or until a skewer comes out clean.
  4. Cool for 15mins in the tin and then finish cooling on a wire rack.  
  5. Great sliced warm and served with a generous spread of peanut butter and a brew of tea.
  6. If it lasts that long, it is also delicious toasted with a light spread of butter, several days later.  We usually make a double batch in the ETP test kitchen for just that reason 😉
